Blueberry muffins

Today we looked at the colour blue.  We collected every blue item we could find and placed it onto our interest table and talked about how many different colour blues there are.  Next we went into the garden and looked around for blue things. N noticed the sky was blue straight away.  We also found some cute blue flowers called bluebells which H loved (he does love a flower!)

Easy Blueberry Muffin Recipe

 

195 grams plain flour

150 grams granulated sugar, plus 1 tablespoon for muffin tops

1/4 teaspoon fine sea salt

2 teaspoons baking powder

80 ml vegetable oil

1 large egg

80 ml – 120 ml milk (any type will work)

1 1/2 teaspoons vanilla extract

6 to 8 ounces fresh or frozen blueberries

Prepare

Heat oven to 200 degrees celsius.

Place 12 muffin cases into a muffin tray

Method

Mix the flour, sugar, baking powder and salt in a large bowl

Place oil, vanilla and the egg into a separate bowl and then add 80-100ml milk.  Mix together.

Pour the wet mixture into the dry ingredients and mix thoroughly.  The mixture should be a little wetter than a cupcake mixture, add more milk if necessary.

Add blueberries and stir thoroughly.

Fill the muffin cases nearly to the top with the mixture.  Sprinkle a little sugar onto the top of each muffin before placing into the oven for 15-20 minutes.
